Vineyard
For the distillation, grapes of aromatic varieties grown in the mountainous Aigialia are selected. The marc, after the end of the alcoholic fermentation, is stored air-tight at low temperatures until the distillation is done. The distillation process takes place in a high-neck copper-discontinuous stack, thus creating a regression phenomenon where, due to lower temperature at the top of the neck, fewer co-stacks are able to come in steam and enter the final product. Thus, the spirits produced have a lighter and delicate flavor. Not all of the liquid collected from the distillation is used, but only the “heart” that has a higher alcohol concentration and pure scents. The “heads” that come out first and the “tails” that come last are not used as they are dangerous. Storage of tsipouro is made in small stainless tanks.
