Manual harvest and immediate transfer into the winery in small crates. Destemming and transfer to stainless steel tanks where alcoholic fermentation and extraction take place. 14 months in new 225-lt barriques , additional 4 months in new 225-lt barriques for the entire blend.

Cabernet Sauvignon is one of the most widely grown grape varieties in Greece and around the world. His national reputation has to do with the special importance that this variety plays in Bordeaux wines (especially on the left bank), where it mixes mainly with Merlot and Cabernet Franc, producing some of the most important and most expensive wines on the planet. Except for France, however, Cabernet Sauvignon is a great blend, giving extraordinary samples to many other countries in Europe and the New World. Its grapes have a thick crust and are resistant to rot and frost.

Cabernet Sauvignon has great aging potential and ‘loves’ the barrel both in the fermentation process and in the ripening process. The unique aromas of wood, vanilla and spice derived from the barrel are added to the aromas of black berries, blackcurrant, eucalyptus and green pepper grapes, soften high tannins and also add to its structure and complexity.

In Greece the first C.S. were planted in Metsovo. Since then, many Greek wine producers have used this variety either for the production of unicolored wines or for mixing with other Greek and foreign varieties.
